The Would Restaurant
Many guests say that "the old resort atmosphere relaxes you and takes you back to slower days." On summer evenings guests enjoy dining on the porch. In the winter they dine by a crackling fire with white linen table cloths, candlelight and fresh flowers.
We offer a varied selection of Contemporary American Cuisine prepared from local ingredients.
Came her on a whim while passing through, everything was excellent from beginning to end, service, meal, ambiance.
Professional, courteous service and great food ! Also a pleasure to dine at the Would. It's nice having such a treasure so close to my house.
This was our first time to The Would. We loved it and will be back. Our server, Stefan, was very attentive. The food was perfect. It was a great experience.
Everything we tried was excellent. The clam appetizer was unusual and hearty; we asked for spoons to savor every last bit of the rich broth. The elegant atmosphere would make the Would a good choice for a special event dinner.
This was a return visit for my wife and I, it was well worth the visit. The service was again excellent and the food superb. The Halibut dish was truly wonderful and part of the prix fixe menu along with their salmon dish. We will return.
We really loved the chopped kale salad!! That was the only thing we really raved about. The small portion of salmon was well-cooked with a nice crispness on the outside. Everything else was good, but we may have been able to find a closer restaurant to home that had food that was just as good. They ran out of the dessert that I was looking forward to :(
The atmosphere was great - it was a freezing cold night outside and the restaurant was a comfortable temperature - no drafts! We were able to take our time eating and linger over coffee/tea and dessert.
I was glad to see vegetarian items (even though I am not vegetarian, I sometimes do not want meat). The risotto was good. Someone else had pork osso Bucco which they loved.
I’ve eaten at The Would before. It’s always a positive experience. I’ll be back!

I was very disappointed in my food. I found the tuna tartare appetizer delicious but difficult to eat. My dining companion had the scallop entree. Scallops cooked perfectly! Unfortunately, I ordered shrimp and grits with andouille sausage. Sausage was bland and tasteless. Grits were not hot. Shrimp was so over cooked. Not a good dish at all. I was visiting from Florida. Don’t think I will return.
Enjoyed dinner out with friends. I ordered salmon with a Dijon sauce and diced Brussels sprouts with quinoa. Really delicious!!
Lovely, welcoming place, friendly communicative staff made us feel very welcome. And wonderful to say it was delightfully quiet enough for normal conversation... a huge blessing! My martini was perfect, short ribs excellent and well seasoned. My wife’s scallops and vegetables needed seasoning, but were otherwise fine. The lovely calamari appetizer we shared might have been better served with a more savory dipping sauce, at least in our opinion. Do not pass this place up if you are in the area because it is a treat!

Went to celebrate my son’s 18th bday. Place was adorably cute, service was amazing. We loved our waitress Judy! She was a senior in college and was so super interactive with us. Even when the kitchen was backed up, she explained and apologized and kept us informed. Crispy Brussels sprout appetizer was my favorite! I got the risotto cake vegetarian dish, was delicious, my son got a steak, but asked for medium, but came rare. I told him to send it back, but he was worried, it would come back well done. My husband loved his scallops. It was a great night.
We had an amazing dinner with our friends. From the cocktails to appetizers to main course the food & service was excellent!

Hidden gem. Ribeye was superior to one I had at a NY steakhouse and scallops tastier than a Florida fish house. And the greens were amazing.
Excellent food and service, can recommend the Scallops and Salmon, quite reasonably priced given the quality of the food. If they have pie on the desert menu, get it, amongst the best, but more a seasonal thing.
Spent a delightful evening at The Would Restaurant. Weather was terrific so we were able to have dinner outside on the porch. The service was efficient but not very warm or friendly. Food was delivered as ordered. Two of us had the BBQ ribs. The smoked flavor was great. They were delicious as were the fries. The roasted chicken was good but not flavorful. One guest had the rib steak and he thought it was very good as well. We did not have dessert. Options were not as creative as the entrees.
My husband and I have been here before but this was a first for the rest of our party. We had an amazing dining experience. It was such a relaxing evening, the weather held out and we dined outside on the covered porch. Our waitress, Amanda was delightful took care of all 9 of us! Food was fabulous!
The food was excellent and not too expensive....we would definitely recommend to our friends.
Menu was changed and new Menu was very limited. We were really looking forward to the Beef short ribs and were disappointed when we found out they were no longer available.

Very nice setting for pre commencement celebration, but service was very slow. Took an hour from seating to getting food.
The staff was wonderful and incredibly accommodating making my husband's 70th birthday celebration very special. The food was phenomenal and noteworthy. Although we were just visiting the Poughkeepsie area, we would make a special trip back to go to this restaurant again. Excellent experience all around.
The food is always wonderful and the service is professional yet warm and friendly. Our server, Amanda, was a true delight. On making our next reservation, I would ask to be seated in her section. Add to the equation that the The Would is just two miles from our home, and it makes for a perfect evening with delicious food.

Overall, this was a disappointing Mother’s Day Brunch experience. The woman who called to confirm my reservation was rude. She was caught off guard and unprepared when I asked if they were handicap accessible. She was relieved when I said my 83 year old mother just had difficulty with steps but wasn’t in a wheelchair. The woman who greeted us when we arrived was also rude. Far from welcoming. The buffet selection was poor. The waffles were soft and barely cooked. The pasta had no flavor. The French toast was deep fried bread. I live in Philadelphia and am fortunate to have a wide variety of culinary greatness all around. I visit the Hudson Valley many times through the year and and sadly it is challenging to find just plain good food in a clean and welcoming restaurant. The meal was expensive-which would have been fine if it was deserved. The kicker was having the tip added in to my final bill. And at over 20% no less! For a buffet!! Definitely not returning!!
For a Mother's Day brunch, the food was exceptionally fresh and well cooked. Salmon with dill sauce was moist and delicious. The cronuts were wonderful. Great variety. Service was attentive. Only small complaint is that tea water and coffee were not hot enough.
The Would Restaurant is in an interesting location - without GPS, I'm not sure we would have found it (no pun intended.) However, it was well worth the drive, which takes you through a rural neighborhood. We were greeted promptly and seated immediately, and all the staff were friendly and welcoming. The view of the property (a rural inn) would have been charming if it hadn't been raining hard and foggy. Oh, well. Incentive to return again!
The menu has some interesting and unique selections. Unfortunately, our first choices for wine, while on the wine menu, were not available, which was disappointing. We were able to find a wine that worked, however. That was the only off moment in the entire evening. We shared the roasted Brussels sprouts appetizer and it was fantastic, one of the best iterations of that dish I've had. Our group of four finished it and would have licked the plate if we hadn't been out in public. We all ordered different entrees, and then passed them around, and everything was delicious. I especially enjoyed my spatchcocked game hen, something I make at home, which was even better than my own. For dessert, we ordered the lava cake and the maple rum creme brulee. The creme brulee was by far the best dessert. The lava cake was more like a flourless chocolate cake, it had no lava center. It did have a delicious chocolate flavor and smooth, moist texture. The creme brulee had a mild maple rum flavor, and the texture was so light and creamy, we ended up trying to steal the last bits from each other. Delicious.
Our server was a lovely, warm, friendly, and professional man who made us feel welcome and was very patient as we took our time through the meal. We loved this restaurant and will return when we are in the area again.
The prix fixe dinner at $25 was quite a bargain. Choices were excellent and the food was very good. I didb't care for the creme brulee but the brownie with icecream was excellent. Wine selections were very nice as well. A very enjoyable experience. Looking forward to going there every month.
We are frequent visitors here and came on a Prix Fix menu night. It was a good meal at a reasonable cost. Thank you as always.

This is such a nice restaurant. My family and I went to dinner for my birthday and everyone was impressed with the food. We all had something different and we all agreed that we found a new favorite place to eat! I can’t wait to go back!
Very disappointed . . . First, the service was friendly, but very inconsistent. When I unfolded my napkin, it was stained and the server didn't come back for the longest time, so I had to take a clean napkin from the table next to us. My husband accidentally spilled his water on the table and over the entire bread basket; the water was blotted off the table, but our water soaked bread was never replaced. Dirty plates and the soggy bread basket sat on the table until we finally asked for them to be removed. The menu said to "be patient" because everything was cooked to order . . . however, everything except my husband's steak was obviously re-heated. Our server confirmed this. Food was very overpriced for the quality. Cappuccino was from a Nespresso machine and was served in a very tiny espresso cup and cost $8!!! The last straw - when we got our bill, we were charged $1 extra for every drink that was ordered "on the rocks!" Will not be back!!
Had a very nice dinner with some family members not seen in a long time. Very good food and a very good service.
