wa’z is a Japanese Kaiseski restaurant that distinguishes its menu with a modern Northwest Kaiseki tasting of artful, seasonal fare.
We serve a 9 course tasting menu available either at the chefs counter or at the regular dining table.
We also have a temaki lunch set available on Saturday and Sunday during lunch time.
Please be aware that the dining table is named “high top table “ on the reservations.

Wonderful Japanese kaiseki place for a special occasion dinner. Fyi, "high top" means table, not counter, but it was just fine because the chef hand-delivers your food to the table and gives you an explanation of what you're about to eat.

It was such a wonderful dining experience at Wa'z! We went there to celebrate my husband's birthday and it was perfect in many ways. Every item in the Kaiseki menu was well-executed and the chefs took their time to explain what the dish was made of. Food presentation was also outstanding and it was aesthetically pleasing. It is a great place to celebrate special occasions and I can't wait to go back there next time. :-)

I came here with my husband as a secret surprise to celebrate his birthday, as a weekend getaway from the Bay Area. Little did we know, we had one of the best kaiseki experience outside of Japan. To back up my claim, we’ve been to Japan handful of times and have stayed at various ryokans. We always look forward to our traditional kaiseki meals because it showcases the local and seasonal ingredients of a particular region of Japan.

Chef Hiro and his team of sous chefs nailed the heart of kaiseki cuisine. The simplest of ingredients are also the most difficult to master. The cooked rice had the glossiness & stickiness. The dashi (base broth for many Japanese dishes) was clear and packed with umami. Everything from the knife techniques, the beautifully shaped plates, the presentation of the food, to the explanation of every ingredient each course made us felt like we were in Japan once again.

Thank you Chef Hiro & team for such a fulfilling meal and for making my husband feel special that night. I only wish for wa’z to be closer to the Bay Area! Or perhaps plan to open a restaurant in the near future in the Bay Area? 🙂

It’s not well explained but there seems to be set seating times as they prepare courses in groups. Nice explanation of each course but an overall explanation of kaiseki for newcomers would have been nice. Quality of food was great but it’s not the same as I had in Kyoto.

1 chefs nails are too long and should be cut and shortened

2 after tax tips, $145 per person. price > expectation, very disappointing. Most ingredients are just cost saving. The most valuable dish (tsukuri/sashimi) out of the 9 courses tastes just OK, not amazing for sure, but very salty, also uni was not very fresh.

3 Not the best omesake in North America, but one of the most overpriced for sure (I don't mind paying high price otherwise I won't book the table, but price is way above expectation.)

4 Very disappointing that the chef would short me a jasmine ice cream on the menu, which tells me that they are not that professional on managing their food or portion for their customers (compensated me with a salted cream and a nasty miso ice cream that I did not enjoy)

The food and service was outstanding. My wife and I attended with two other friends and we all came away with smiles. It is expensive, relative to just a regular night out, but we all felt we got our money’s worth. For a special occasion, I’d highly suggest it just for the experience.

As I was researching restaurants for our upcoming visit, I saw Wa’z on several foodie lists. A fan of Japanese food and the beautiful and incredible kaiseki meals served during visits to Japan, I booked two counter seats for my wife and I.

We both loved the experience watching the chefs execute their craft with artistic finesse up close. Each of the nine courses perfectly balanced in flavor and almost too pretty to eat. I enjoyed everything from start to finish with the salmon tartare, wagyu beef and uni, and unagi courses being among my favorites.

If you’re in the city and looking for a great culinary experience, Wa’z is an excellent choice. Can’t wait to come again the next time we’re in Seattle.

Amazing food!
It’s even hard to believe you can get this level of wonderful Japanese outside of Japan, and at this place.
Highly recommended.
I have already been to this place 4 or 5 times and will certainly continue to re-visit.

It’s a terribly precious, self congratulatory place. However the food was very good and the ingredients of the highest quality. Portions were very small and I was still hungry even after ten courses. The $110 tasting menu is all that is available.
We were rather surprised that when the bill came we were urged to place a further tip - 20% mandatory seems adequate to me. Seems a bit OTT in spite of the excellent quality of the ingredients used.

We had an awesome time celebrating my husband's birthday. We had reservations and came late due to traffic, and everyone was very accommodating. They made the night special, and the food was incredible. Definitely one of the best restaurants I have eaten at in my entire life.

This is my 3rd time dining at Wa'z Seattle. Each month Chef creates a new set of menu according to season change. To me, dining at Wa'z not only gives me the satisfaction of tasting top quality Japanese food, it also gives me the enjoyment of experiencing an unique artistic presentation.

Its not a bad restaurant. I'd recommend it if the price point was lower and the quality of food was a tad better. I personally just feel that the food was too inconsistent for a recommendation at the price offered. Some dishes were amazing, and some left me saying "whoa, that should not be on the menu"
Service was good, staff was friendly. But service was a bit odd. Presenting each dish by a different staff member, and that staff member not always knowing what he or she was explaining made for an odd experience.

Overall, a good experience. But not one I'd recommend for the price point, or try again until the service model is changed, and perhaps the menu is revamped a bit.

I love how unpretentious this place is. The food, presentation, and friendliness of the staff is as magnificent as any Michelin starred restaurant that I’ve ever been to. The ambience could use updating, but other than that, I’m a fan. High praise for a local restaurant that serves authentic Washoku cuisine!

Went in May when the food has a Boys' theme. The chef was able to deliver some fresh in season ingredients, but putting them together wasn’t entirely successful. The ambience was also lacking for a kaiseki restaurant.

This visit was my fourth time to wa'z , with my first being shortly after wa'z opened. The food is just as thoughtful, the presentation just as clean, that atmosphere a sensitive balance of formal manners with casual attitude, and the taste just as delicate as the first wonderful trip. The team has grown, and the place has matured, but the thoughtfulness and seasonality is something that continues and is (for me) to be valued greatly.

Me and my friend went during their Sakura special, everyone were nice there and very thoughtful. You can tell that they put in lots of effort in the menu, all the courses were decent but nothing really surprised me.
I would recommend my friend to go try just for fun, but this is not the place on my first to go list.

Legit Kaiseki from Kyoto. Immense efforts and heart are poured by Chefs led by Hiro san in producing fine cuisine and art here. For the April menu, I especially liked cured leaves which were prepared one year ago with an extremely low yield in Hassen and ice cream. Delicate taste and beautiful presentation beyond words. A must try.

There’s a lot that can be said about wa’z. It’s never a simple menu and it will always challenge your palate. The opportunity to speak to the chefs at the counter is priceless. They have an excellent sake selection, and they take the time to make well reasoned suggestions.

The experience was magical. The chefs performed directly in front of us, preparing dish after sublime dish. Each course was unique, delicious, combining fascinating flavors and textures. They explained each dish, telling us the ingredients and concept. The sake selection was fabulous and they did an excellent job of recommending the perfect match for the dishes we were consuming. The pace of service was perfect; never rushed, but offering the dishes at the rate that guaranteed us plenty of time to absorb each exquisite set of experiences. It is an expensive experience, but provided an evening commensurate with the cost.

I had decent Kaiseki in Kyoto and this restaurant is comparable to that. It is true Japanese Kaiseki with a local touch. Recommend for anyone who likes fine Japanese cuisine. Of course as any Kaiseki place, the price is a bit on the high end but I think it’s well worth it.

Oh and, if you sit at the counter, you can see the chefs making the dishes and explain what each dish is.
