Not enough staff for the rush, but otherwise a superb experience.
Three of us shared three fish dishes. The sides were kind of small to share (they're not supposed to be shared), so consider one side per person. Shannon (our waitress) was fabulous, friendly and quick.
The food at this place is amazing! The servers are very attentive and courteous. The dishes are very well crafted and the specialty cocktails are excellent; I highly recommend the Margarita Verde and the Wild Eastern Sea Scallops

Since we are fans of the Water Grill in L.A., we were happy to find one in the Forum at Caesar's Palace. We were a little skeptical, though, because Vegas iterations of classic restaurants are usually a let down. Not so, this one. The service, ambience and food were all very good. You might wonder how fresh the seafood can possibly be, in the middle of a desert, but our meals were deliciously crisp and clean, and thoughtfully presented, and the desserts were absolutely yummy. Our waiter was great and food was served efficiently. We've had many meals on The Strip, this past few years, and this one did not disappoint, as many have. This is a reliable recommendation for fish and seafood lovers.
The experience from beginning to end was wonderful. I highly recommend this restaurant.
Dinning experience was great. Our server Misty was amazing, very accommodating and great sense of humor. the food was delicious, great wine pairing. The venue was beautiful

What an amazing place! The service staff was great and very accommodating. I had the sea scallops and they were cooked to perfection. We will definitely eat here again when we return to Las Vegas.

Outstanding dinner. I had the Chilean Sea Bass, which was done to perfection. The food was as good as the Santa Monica Water Grill,which I was familiar with.

We have enjoyed each visit to Water Grill. This was our 4th visit this year and the service is always excellent and food superb. We love being able to count on an excellent dining experience every time!
We had the Caesar Salad, the Halibut and Sea Bass this time and for dessert the chocoholic's delight (my name for it).
Everything we had was excellent! From the housemade bread to the rarely seen Halibut Cheeks appetizer, to the perfectly cooked Chilean Sea Bass. We had a great meal!

We sat in the bar for happy hour and enjoyed our service with TJ. We had some of the best food we’ve ever had!
I had great expectations for the Water Grill in Vegas, after reading many raving articles and reviews about it, but it was a major disappointment.
We ordered the stone crab claws (4 for $74, not so cheap), which the waiter highly recommended "as being in season and not to be missed". The claws turned out to be objectively inedible, they must have been frozen for a long time, very low quality. We opened two of them and complained; they agreed to change the remaining two (even if we had not eaten the two we tasted). The replacements were somewhat better, but still below, say, Costco quality (which is not setting a very high bar).
We also had sea urchin, which was borderline fresh, but still tasted quite metallic (the urchin changes taste depending on the "gender" it assumes at the time, you can tell by looking at it when it is metallic and when it is sweet).
We then ordered a whole Wild New Zealand Pink Brim, since it is a fish we like, but we do not find very often. The waiter told us the weights of the fish they had available and we chose one. After a while, the waiter came back saying something about the fact that the fish we wanted had been sold, but left without asking what we wanted to do. Eventually, they brought us a fish of the weight we wanted, but it turned out to be a farmed European Sea Bass instead of the Brim. Basically, they changed the fish without telling us, which got me quite upset. I just do not think something like that can happen in an upscale restaurant.
We had also ordered a side of kale, which the waiter forgot, but at that point we did not insist on it, we just wanted to get out of there.
Overall, the quality/freshness of the seafood and the misleading service was absolutely unacceptable for a restaurant that claims to be a top-notch seafood restaurant. What a disappointment!
We did A quick getaway to Vegas and ate at the Water Grill. Grey experience all the way around. Highly recommend this restaurant. Wish we had one at home.
We visited on a Thursday night, and Chad our server immediately set the tone with his professionalism and knowledge of the fantastic menu. The appetizers were perfect, from the crab cake, halibut cheeks, and perfectly charred octopus. My dining companions raved about the filet mignon and Dungeness crab entrees, and my Chilean sea bass was the finest I have ever tasted. A truly fantastic experience you have to see for yourself.

My husband and I both agreed that this was the best meal we've had in a long time! The seafood is all fresh and such a variety too. Our waitress (cannot remember her name!) was super friendly and very knowledgeable about the menu and had great recommendations for us. Great location in the Forum Shops inside Cesar's Palace too!

Ordered fresh whole fish and arrived dry and tasteless. Calamari were fried in two week old oil. Expected more from a new up and comer.

The best part of the meal was from the Raw Bar portion of the menu, oysters, scallops & wonderful CA uni/sea urchin.
Everything else lacked inspiration. We ordered lobster, brown butter sea bass w/butternut squash gnocchi, broccolini, Brussels sprouts and bread pudding. Everything was well presented but did not live up expectations, an overcooked 2 lb. spiny lobster was tough and rubbery, the sea bass was in a puddle of plain clarified butter and the gnocchi was bland and the veggies lacked anything to make it special. The Bread pudding was a dense brick but the accompanying ice cream was delicious.
Seems to me that Water Grill is barely an improvement on King’s Fish House. But if you’re looking for a pedestrian seafood restaurant that aims at mass approachability, this place might be great for your next post Las Vegas conference/seminar dinner.
Food was amazing. Hard sell on getting you to buy everything on the menu was intimidating and a drawback on whether we'd go back. Though we probably would because the seafood was amazing. Had whole lobster, Chilean Sea Bass, side of brussel sprouts, and 1/2 dozen oysters for appetizer. Server seemed inexperienced for the price point and basically appeared somewhat overwhelmed or else lost track of our table as we didn't see him much after our food arrived and drinks got low and closed out the bill with someone else.
Great restraunt, food was very disappointing, not a great value
Our server William was on point and never let us down. He was energetic and enthusiastic and we couldn’t have asked for a better experience. William made the entire evening an exceptional experience. The 8.75# crab at $62.00# was worth penny.
Management unfortunately that was on hand was a complete opposite. We asked another server to speak to the manger at the end of our dinner to place compliments and you would have thought we were asking to speak to Caesar himself. After multiple staff walking around and essentially eyeballing our table of 7 the manager completely uncaring and inconsiderate walks up your table and nods and and walks off. He might have smiled and said Thank you but after his initial greeting we would have better off talking to the statue in the courtyard.
