We were a group of 6 who booked this restaurant weeks before for a special event. On the morning of the booking I called to make sure everything was as planned and requested for the booking wanting the evening to go smoothly. I was told that my request would be met and all was fine. On arrival we went upstairs to the rooftop bar as we were early,waited over 30 minutes for our drinks,they didn’t arrive. Arrived at the restaurant and taken to a table that was right in the middle of the floor next to the service area. My request was simple quiet table near the window not stuck out in the centre of the meal service area.( This table was later removed)
This was rectified by the manager after a discussion with staff. Embarrassing in front of my guests.
We did have a delightful waitress Yuri who did her best to make our evening enjoyable.
The food was not really to the standard expected as a lot of the seafood run out and was not replaced and the hot food really poor choice. Not at all what you would expect from a Hyatt.
Food was really great. Awesome service. It was value for money. Seafood was fresh. Ambiance was good. In general, I would highly recommend dining with my friends next time.

Since my last visit the service has improved 100%!! The seafood is delicious especially the fish which is amazingly tasty and moist. My friend & I were pleasantly surprised.

If you are a seafood person I recommended!! It doesn’t worth your money but other line foods didn't have much choice. Stuff so nice such a good memory.
The table at the window was nice with distant views of Darling Harbour. There is plenty of space between the tables that avoids people bumping into the back of your chair. Due to that space the noise level was quite low and a conversation was easy.
It was our second time at Sailmaker and there was a marked downgrading of the variety of food. The vegetables offered were to clever in the mixture of flavours. Why do beans need other things mixed in. The salad choice was also limited. The serving of the whole Barramundi was spectacular but the fish was overcooked to mush. And so was the second fish!
There are other hotel seafood buffets in town that are a little bit more expensive but give far better food and service.

The food was nice and a good variety, I had to chase down a waiter to get table service for wine as no one was checking on us or asking if we needed anything. It was a nice quiet place and easy to talk, and yes I would consider coming back as I enjoyed the food and wine. The beer at the cocktail bar in front was abit high price though.
the staff was very accomodating and the service from our matradee was outstanding, i booked for a normal table instead of high tea and they sorted it for us in a very professional and timely manner, outstanding food and service, will be returning.
The sea food was fresh and in abundance it was money well spent thank you.
Ate here on Jan 4, 2019 and it was excellent so took friends on Jan 18, 2019 and what a dismal change. We caught the train from Newcastle just to meet our friends here for dinner as we'd raved over it from the 4th and were very disappointed on the 18th. On the hot buffet only half the food this time, not as much seafood and the dessert table wasn't as good. Not enough staff either. Notified staff that we were very disappointed.
Poor variety of seafood. Should have a better selection of green salad.
Deserts should be individually labelled.
Loved the meal and service, seafood was delicious, Salad bar could go back to basics, desert bar could cater to people with a Sensitivity to chocolate.

We had our work christmas party here last weekend. The service was terrible. We couldn't even get the waiter to order some drinks. We had to find someone to pay the bill at the end. There was a very limited range of options for the buffet. We were booked in for A la carte menu but were told it was too late to order from the a la carte menu, even though our booking was for a la carte not buffet. The bread rolls were hard and stale. It was the most terrible dining experience i've ever had! Would not recommend.
I read several reviews on Trip Adviser before going and they were mostly negative and suggested that the seafood was below par. I was delighted to find out that this was not the case. There were large four food islands. Seafood; soups, roasts and cheeses; salads and cold meat cuts; and desserts.
The seafood island which was mostly criticized in previous reviews included two large whole baked salmons which were replaced as soon as they were three quarters gone. Plenty of large king prawns, muscles, local oysters and blue swimmer crabs. The marinated octopus was over cooked and rubbery. The roasts and cheeses island offered one roast (pork) and one casserole dish and three different cheeses. The salad island offered a comprehensive set of salads (around fifteen) and a good selection of cold meat cuts. The dessert island offered a good selection of desserts including ice cream, cakes and puddings.
My primary complaint is the lighting which was dimmed to an unacceptable level at most tables.
We used a Scoopon voucher (two for one) and at that price, it is very good value for money. However, their full price is comparable to a three other City hotels that offer much more comprehensive buffet lunches and dinners with many more choices and so relative to what is offered at these other hotels, the Sailmaker full price is too high.
If you can get a two for one voucher, it is worth visiting, otherwise, for the full price, I would consider alternatives.

Host look confused about the payment for the buffet even we told them already paid when we booked with codo.when the host sat us at our table no one come over to offer drinks. Good seafood but hot food is disappointing and soups are bad. Try to get waitstaff attention to get more wine .
Buffett style dinner with eat as much as you want. Great value if you like seafood. Not much else available if you don't.
Very quiet place for a meal, seated by window so had a view. Our waiter was awesome! Lovely food, small portions.

Excellent fresh seafood and stunning outlook over Darling Harbour. Staff attentive and courteous. Buffet choices excellent and cooked whole barramundi outstanding dish of the day. Location, food quality and presentation very good with overall great value on voucher deal.
We had a living social voucher so from that point of view, it was quite good value. Both of us loved the mains, but neither of us liked the desserts which we thought most were dry or stale. Crackers for the cheese very boring and not enough options, and drinks over the top expensive. I wouldn't recommend if I had to pay full price, due to desserts and drinks so expensive. Mains were lovely and staff very pleasant, but we had to ask for assistance, more than was offered.
Our waiter was extremely attentive. He ensured that we would get bread twice. Provide a dish for washing hands as there was seafood in the buffet.
We requested a window view because of a special occasion and when we arrived there was seats available and the didn't put us near the window with the view. When I enquired, they said sorry no tables which I could clearly see were available and nobody sat in them for the entire 90 minutes we had dinner there
