Poly is a walk-in wine bar by Mat Lindsay and the team from Ester.

We take limited reservations at selected times but save the majority of our seats for walk-ins. If you cant find a reservation online please give us a call or walk in!

Lovely venue, very attentive staff - I don’t eat certain food due to sensitivity and the waitress plus kitchen staff were very considerate and wonderful. My friends and I had a great night drinking nice wine and eating amazing food - highly recommend the potato and salted egg yolks. Will be returning again - Thanks Poly for a lovely night.

Excellent food. Really nice. Service needs work. More attentive and enthusiastic. Should be telling diners how menu works. Shared etc rather than having to ask. Better service means more drinks. It wasn’t that busy, could have used more attention.

Had high expectations of Poly as it is very highly rated and my Ester experience was amazing. Sadly the food was nothing special, some dishes were overly salty and hard to eat. The only dish we enjoyed was the beef tartare. The service was friendly and helpful and the wine was good.

All the dishes were lovely, in particular, the anchovie toast, and would love to go back again. Wine list is excellent as well.

Let down - when we first dined there about 6 months ago, was fantastic. This time, not so...

Service not great, slightly rude and not helpful.

Food was ok - reconsider keeping the raw & pickled vegetables on the menu... every vegetable on the plate was raw apart from one beetroot.

The Snapper - we’ll cooked and would’ve been delicious on its own, however someone decided to squirt a disgusting sriarcha style sauce over the fish...

Disappointing. Great reviews so expectation high. Unfortunately the reality didn't live up to the hype. On the good side, the food was tasty and well cooked, the wine was good and the vibe, while noisy and a bit stuffy, was hip. On the bad side, some of the dishes had sold out and when the food portions eventually came, they were on the small side and consequently felt overpriced for what they were. This could have been a result of the main issue: the deception about getting a seat. Meant to be a 'most seats are kept for walk ins' situation however we arrived at 6.45 pm and were told we couldn't be seated until 8pm because their other restaurant had burned down and they needed to accommodate those patrons - but 'we were their top priority'. Okay, fine. Went and had a drink. No text at 8pm, so checked with them - 'very soon'. More drinks. And more drinks. At 9.15 we were seated. Yes, could have gone elsewhere but was with others and they weren't too fussed, especially after a few drinks. Understand their situation but felt we were deceived and it dampened the evening.

Just wonderful service and attention from Adam and the crew, from the moment we walked in the door. It was a special occasion and the crew made it feel just like it! We were not rushed at any stage (on what was a very busy night) and nothing was a problem, the food was a delight and so were the wines - thank you so much!!

This is a wine bar masquerading as a restaurant that fails to properly execute either with any resemblance of aplomb. The layout is ill conceived and under manned. With rents as they are in Sydney, you can perhaps forgive the desire to cram as many tables into your diner as is possible. However, to then attempt to take on what would be a large dining space for most restauranteurs with wine bar infrastructure is pure folly.

The excessive amount of tables are jammed together in ridiculously long rows like an Octoberfest pop up. With little to no space immediately behind your seat, expect to be constantly jostled and elbowed in the back as patrons try to negotiate their way past you. Reminded me of an old Micallef Program sketch, a spoof of a mock period drama called Spiffington Manse where the characters can’t move around a room for all the furniture. The wait staff appear to be as equally bemused by the clumsily arranged acres of tables as the diners themselves.

Beyond that, the food on offer from the relatively small menu was quite good, as is the wine list. That said, if a wine bar is what you're after, you can find this type of offering in far more pleasant dining spaces.

We loved Poly, service was very friendly, responsive and engaging but the food was the major stand out - nearly every dish was a delight particularly anchovy toast and the clams - do not miss the clams!

Not sure we liked the “canteen-style” lay out, quite cramped and meant you’re continually bumped and pushed past while eating. But other than that - just fantastic food and service!

One of my best ever restaurant experiences; long slow glorious time together while we ate astoundingly fabulous food, listened to fabulous music, not too loud and good quality speakers, great staff, kind attentive, really helpful, outstanding wines, so interesting!! It really did create am amaaaazing atmosphere for us

I love when I can have a leisurely early wine dinner. Wasn’t rushed at all. Had enough time to try all the dishes I wanted and drink all of the wine. Great service great food. Good vibes.

One of us had been given a $50 Xmas gift voucher to use at Poly and we were very pleased to have gone there on Monday evening. The place was not full but busy enough to feel we were in a trendy spot. The food was imaginative and tasty and the staff were attentive, professional and knowledgeable. It was fun watching the various dishes being put together.

The most expensive dishes missed the mark with regards to the taste, oysters were overpowered by their dressing, fish was bland and needed seasoning, cheese dumpling onion soup was also a bit bland and the soup was more of a sauce.

Sourdough bread roll and dip was outstanding, as were some vegetables we ordered and the blood orange sourbet was out of this world, we wish we didn't share and ordered a portion each.

If I were to do it again I would order lots of the cheaper dishes as they seemed super delicious.

Poly is one of my favourite bars - it has a great cosmopolitan feel but isn't so noisy that you have to shout to be heard. The food is amazing, every ingredient treated with respect and a joy to the palete. The menu changes often enough to keep me returning regularly. Please never take the steak tartare (in any of the wonderful interactions) off the menu - its heaven!

Friendly staff that are attentive but not in your face, reminded us that one diner had a food allergy by checking in. Wonderful wine recommendations and wine list.

Thank you Poly for another great evening.

difficult to get in the front door-tables so close to it
sat next to speaker.....
all dishes were same texture- soft, not chewy, white in colour, a lot of vinegar
we shared 6 dishes but were hungry afterwards

thought a wood fired oven would provide something with more character

and we were not tempted by the desserts
