We are a community focused wine bar in Subiaco, dedicated to eliminating waste from the way we socialise, entertain and dine. In doing so, our offering is steadfastly transparent, concise, flexible to suit the influence of seasons and consists of produce sourced strictly from Australia's South West.

Located in the sparsely altered, iconic Simon Chugg building, one of the oldest commercial tenancies in Subiaco, New Normal offers simple, yet thought provoking fare with comfortable counter-top dining, a rooftop terrace and a intimate, communal dining room

We have two of Australia's most exciting young chefs at the helm of our open kitchen. Charlie Vargas (previously Frasers, Balthazar and 1907) is supported by Vince Conjaerts (previously Fervor, De kleine zavel, L`épicerie du cirque)

Excellent service, 90% of the menu is gluten-free which suited us, and what wasn't gluten free was easily adjusted to accommodate. The food was fresh and tasty, but a bit on the expensive side for the size of the dishes. Still a lovely night though

Really attentive service. Delicious wine and cocktails. Good sized plates for sharing so that multiple dishes can be ordered and tasted. The best desert I've had in a long time.

We were a group of 8 ladies and had the best time on Thursday night! We had a WONDERFUL lady as our waitress, she was so knowledgable and had the best approach - we all commented a few times on her great service throughout the night. Food was delicious too! The portions were quite small, 1 plate is probably best to be shared by no more than 3-4 people otherwise you literally get a bite. If you have more than that, order 2 of each dish you want to try. The desserts were incredible too! The chef created a special dish for us with ingredients that were available and it was delicious!! We loved it and will definitely be back!

What a brilliant evening we had. Staff were friendly and enthusiastic about the menu and were very engaging. The food was stunning in perfect portions. Definitely not to be missed! We will be back and we'll be telling everyone we know!

Amazing service!!!
The food is local and West Australia, so the menu changes.
The food is incredibly tasty and fairly good sized for the price. The wait staff and chefs were able to assist one friend with several food allergies and intolerances.
We were happy to assist with trialing a new dessert, set to go on the menu.
Loved the slow roasted lamb, carrots and the roasted potatoes!

The food was really good, and the atmosphere was lively and fun (although a bit noisy to hear conversation easily). The service was very friendly but the waitstaff struggled to remember the details of some of the dishes and had trouble recommending a wine choice (to be fair, our main waitress said it was her second shift, but she wasn't the only one who had trouble). All in all, it was a really enjoyable meal and I liked the share-food concept.

Great seeing meals made from local produce. Not a huge menu means less food wastage and chefs can concentrate on quality. Deliciously simple and simply delicious!!!

Great attentive service initially that then moved to stress to ensure we were out before next booking. Our waiter (supported by Manager we think) with ketvys know a time check Of 30 mins till we needed to go. This spoilt our experience at this restaurant. We were told if we wanted dessert then it would have to be seen with kitchen and if could be rushed .. oh well! It could have been managed better to share with us they had a table of 16 coming in.

Delicious food with a great ambiance. Is delightful to be able to watch the chefs work their magic in the open kitchen and e loved the concept of fresh local produce and their embracing of making a better planet with their ethos in recycling and repurposing.

Great flavours, inventive and interesting ingredient combinations and presentations. Fortunately 3 women so not big eaters. Meat dishes very pricey for size. The suggestion by wait staff that they would bring bread and olives to get us started while reviewing the menu suggested a offering rather than clearly a menu item. A little misleading.

The potential was there...Great staff, excellent cocktails & a delicious-sounding menu to boot, however unfortunately on Saturday night, the execution lacked lustre & we felt that a couple of pieces of broccoli brought out before a good 1/2 hour before the remainder of the food was disappointing. It would have been nice to receive all the food together. Drip feeding wasn't really received well & a small whole fished priced at $45 was a bit too steep even at Perth prices.

We had a great dinner before a show at the Regal.
The kitchen is open so you can see the chef's preparing the food....and the food is outstanding.
Not overly complicated, just great produce prepared with care in a chilled out atmosphere.

Went on a very quiet Tuesday night - attentive, knowledgeable service from the FoH crew, good-natured chef banter in the background from the open kitchen and pretty much the whole place to ourselves.

Food was shared, technical and fiercely local. Service was smooth and seemless. Drinks were suitably drink-like.

Definitely a place to sit back and let things happen - the chefs know their stuff, the wait staff have a rhythm and everything worked.

Food was amazing, service was terrific, but the venue is so noisy. We had a table of 8 for a family birthday celebration and it was a struggle to hear anyone. This was a Saturday night. I liked the pared back fitout, and the kitchen on show, but why are restaurants so averse to sound absorbing material.

Well prepared food, although quite limited in choice.
Quite loud but a good vibe. Wine selection, both by glass and bottle, offers unusual styles and blends but is quite limited, and unfortunately not really inspiring.
However, we do enjoy this restaurant which is why we return regularly. Recommended!

After all the hype New Normal has been receiving of late, we decided to see what all the fuss was about. At time of booking we requested the normal table (not high table) and upon arrival were ushered to one of the high tables. No biggie. Staff were friendly and worked through the menu well however the service was quite slow. It took roughly 15 minutes from sitting down before receiving wine + food menus, water and the drinks that we ordered. Wine list is all local however quite short so options were fairly limited. Again, food is most, if not all local, but some of it lacking interest. The pumpkin was the most underwhelming of all of them. Standout dishes: the corn and the lamb. The whole service for 2 people took close to 2.5 hours. Despite having an enjoyable evening we probably wouldn't return, based on: service being slow, small wine list and overall felt it was overpriced.

Outstanding food and service, will definitely be back! Great local produce and caters easily for gluten free and dairy free diets without compromising taste. Staff were friendly, extremely helpful and very knowledgeable about the food and drinks menus.

A welcome addition to the Subi restaurant scene, quiet and unassuming, it’s a thoughtfully designed, welcoming, cosy retreat just off Rokeby road with a delicious array of locally sourced, creatively crafted plates and south west wines to go with. Makes for an amazing date night or get together with friends. Thanks to the team for being so welcoming and looking after us 👍🏻 We’ll be back again soon!
