Gilson’s intimate dining room is available for breakfast, lunch and dinner 7 days a week and caters for large groups and exclusive events.
Gilson offers an ever evolving all day menu focusing on Italian cuisine and seasonal flavours.
A neighbourhood favourite due to its relaxed setting, friendly staff, fabulous drinks list and dishes such as the ‘avocado bruschetta’ for breakfast, the ‘Rigatoni, lamb ragu, ricotta salata, gremolata’ for lunch or dinner, and their take on a tiramisu for dessert, a ‘Baba-Misu, mascarpone cream, cocoa’.
Wood fired pizza is also available for lunch and dinner cooked in the custom built oven.
We booked Gilsons for my daughters 21st birthday the staff were very helpful and tentative. Food was delicious. I really could not fault the restaurant. They made my daughters night something special for that l thank them. I would definitely recommend it to anyone and most certainly be going back.
The vibe here is usually great especially in the warmer months. The service was just a little poor and I had to case the waitress a couple of times.
My prawn/chilli pasta was very good. Service lacking slightly.
It was so noisy that we had to leave early. The food was passable but not particularly cheap for the quality. The serving of wine was generous.

The food here is actually amazing. The service how ever was quite terrible. We had made a booking and once we arrived we were seated. Then another waitress came over and rudely asked if we had a booking or not or if we just sat down without one. I tried to order lasagna which is on the menu but was told there is none left. (This was not mentioned when we were handed the menus) also the 3rd time this has happened to me here. We ordered 1 entree to share and that took 40 minutes to come out. The mains that were ordered At the same time took another hour. Was not impressed. The other people around us that got there after us were all done an hour before us. We ordered more drinks which then took another 30 minutes to come. By this point our food was done. I love the venue and the food so it was quite upsetting.

Gilson’s is a very reliable restaurant. From breakfast through to dinner there is always a dish to suit your appetite. And it has been my experience that they are more than happy to make modifications to a dish when requested. The service is quick, polite and friendly. The venue is modern and clean. My only complaint ( and it’s not really) is that it can get a bit noisy.
This local is a winner.
BEST CHICKEN PARMA I’VE EVER HAD! Tender, juicy chicken, quality toppings and outstanding crispy crumb! Perfect side salad and chips too.
Food and service was fantastic - had seen ‘disco tunes’ from 9pm on the menu however it was extremely quiet for a Friday night and we were handed the bill at before 10pm.
Not the atmosphere I thought it would be.
I love the lowkey, European, dimly lit, quiet and tasteful vibe of Gilson. The food was beautifully cooked, good portion sizes, and just overall unfussy. A new favourite

The service was the worst part of the night by far. We were given two drinks menus for a table of four people - which were only given to the men at the table. After ordering drinks, we were not given any food menus until we asked for them. The water jug at the table was never replaced, and our dishes all came out at different times. We were never asked if we wanted another drink after finishing our first drinks, and were never asked how we were going throughout the whole night. Although the service was poor, the food was good, however I will not be going back.
Everything was amazing!! We had the gnocchi and the pepperoni pizza and they were both delicious!! We wanted dessert, but they dont do them!
Great food, great vibe. A great spot for a drink or big meal with friends. Absolutely love the service, particularly Marc & Jamie. They really make you feel at home.

The service and ambience was excellent, and despite being on par with any relaxed fine dining establishment, they have a great children’s menu and we were made to feel very welcome, complete with colouring in.
My trout on caponata was exquisite, their wine list and aperitifs a delight, and I will be happily returning.
There was no gluten free bread for 2 of my friends and they weren’t offered a reduction in cost!
A weekend surcharge on Mother’s Day was disappointing.
I had 3 text messages & a phone call about my 8am booking. As the restaurant only had 2 other customers at 8am it created unnecessary entries in my calendar.
Very poor value for money.
After eating breakfast at Gilsons for the past few years before the Mother’s Day Classic, we will go elsewhere next Mother’s Day
Gilson is in a lovely spot, opposite the Royal Botanic Gardens and relatively close to the arts precinct. We had an early concert and the staff were aware of that and things moved speedily. We couldn't linger but we were pleased with the rhythm that got us where we were going in ample time. It was a remarkable mild autumn evening and Gilson added to our enjoyment.
Loved our dinner. We had an early dinner at 6:30pm. Staff were excellent. We shared two entrees and a main. All superb. The main (a pasta dish) we shared, was brought out on two plates. A nice touch! Will definitely come back.
Staff were very accommodating given that we had booked for 9 people but a few extra turned up and they were able to move another table to give us a little more space
Food quality was very poor given the price point. Polenta chips were exceptionally undercooked and pesto was flavourless and watery.

We didn't mind our dinner at Gilson, but in a town with so many fantastic restaurants and cafes, we found this place to be a little underwhelming. Service was slow, my meal was not what I expected, etc. It wasn't bad, but we thought it could have been better.
Service provided created an uneasy vibe. We were pushed to order more food at multiple points during the night. Pasta came out cold. Did not enjoy the experience.

You need to do more to have the noise absorbed or abated.
I did notice the work that had been done in the ceiling, concrete floors, walls, glass don't help, perhaps some wall hangings or absorbing panels
I am familiar with Gilson as it is my local restaurant and I asked my friends and siblings to dine there for a catch up. None had been before and all 5 loved it and we had a great evening. Beautiful food, great wines and service.
We ordered two pizzas and a pasta. Both pizzas arrived at seperate times - I think one was forgotten on the order. Both pizzas were severely under cooked. Both having very thick bases that were uncooked and goey. The ingredients on the pizzas were also under cooked, potatoes. Pizzas were returned to the kitchen and cooked further but returned tough on the outside and still uncooked on the inside. Very disappointing considering we have been to The Gilson on many occasions and experienced good food. Wait staff did not follow up post meal nor did they clear our table. We paid our bill at the bar before leaving.
I came to Gilson for my birthday a few weeks ago with a party of 16. From the moment we arrived the service was appalling- we had to repeatedly ask for a menu, call the waiter over and practically rail road him to take a drink order. Never once were we asked if we would like a drink? Or whether we were ready to order, but rather had to flag someone down, even when it came to menus we had to ask for these. Drinks were ordered and took 20 minutes to arrive, meals were forgotten and then we were assured these would be taken off the bill, which they were not. At the end of the evening we were rushed out of the venue despite being told it closes at midnight by one of the waiters- it was not even 11pm.
When I book somewhere for a large party of guests for a special occasion, I expect decent service or at least to be acknowledged and orders to be taken without constantly having to wave someone over. The service was absolutely disgusting. Living in the area I would often take friends and relatives here for dinner/ breakfast, however after this awful service I will not be coming back.
