How do you take a classic staple of American dining, the steakhouse, and break down the traditional thinking to create something entirely new and exciting? That was the question that acclaimed chef and restaurateur Sam Marvin (creator of the much-celebrated Los Angeles restaurant Bottega Louie) posed when he decided the time was right to reinvent what has long been the trademarks of the steakhouse genre – masculine vibe, dark rooms, fancy waiters, slabs of oversized beef and overly expensive pricing. The answer became Echo & Rig Butcher and Steakhouse, located at the charming Tivoli Village just off of Summerlin Parkway; 15 minutes from the famed Las Vegas Strip.

Been going here for years . But On Wednesday, We arrived at 6:30 for our dinner (6 of us) and the front doors were chained up ! No one was in the restaurant. Small sign in window “ we are closed due to staffing problems.” Went next door and they said the employees were not getting paid. Thats going to cause staffing proplems!

I need to change my reservation for a same day, when I dial phone number was impossible to reach anyone and I couldn’t leave voicemail also. I was walking there and ask can I move my reservation from 8.30pm to 9.30, he sad I can’t do it, because we are closing soon, when I told manager what it’s going on with phone, typical answer, phone system is down and that all. How people am change reservation or do anything, no answer. After that I need find other restaurant. Phone system down for days…SERIOUSLY.

I would not eat there again. Many of the menu and alcohol beverage items were out of stock. For a restaurant not to have multiple of the mainstay items from their menu not in stock such as filet mignon, NY steak, lamb chops, etc. is unheard of. We got the feeling they are having financial difficulties. Our entire group gave it two thumbs down. However, their prices were reasonable in today's environment.

Surprised the number of menu items that were out! No lamb, no filet, no bacon, and others. we came here for filet and lamb. Wine list also was pared down selections from full choices in menu. Service was great, leisurely, place wasn’t busy but two of us in a party of four had to order a second choice. Heard great things about Echo & Rig but if we go again, we will try the Henderson location.

We had an excellent experience. Derrick (sp?), our server, was the best we’ve ever had. He was very attentive and friendly and gave perfect suggestions for food and wine. He was extremely knowledgeable and gave superb service. He really made our night. The steak was delicious as well as the sauces to go with it. I know the restaurant has had some issues, but I will say we had an exceptional experience. We’ll be back very soon.

I ordered the Spencer and I felt like it was cooked in the oven and then finished on a griddle. Burned edges on a medium to medium well steak. The server was snarky and the restaurant was too loud to have a conversation. Zero decor or charm here. The pork belly burnt ends were good, but that was about it. Wishing I had chosen somewhere else to celebrate a birthday. Glad we were in and out and about an hour. Not worth the drive from the strip.

Unfortunately, our anniversary dinner was quite disappointing. The ambiance did not live up to our expectations, especially compared to the Green Valley location. The dining area felt more like a fast-food restaurant, complete with paper placemats, rather than the upscale dining experience we were expecting. After placing our order, our waiter informed us that they were out of both filet mignon and ribeye cap. However, we overheard another waiter telling the table next to us that they still had five ribeye caps available. When I brought this to our waiter’s attention, his response was that perhaps the other guests had called ahead, which didn’t make much sense to us. To make matters worse, we were also told they were out of béarnaise sauce, one of our favorites. Later, our waiter returned and mentioned that he had spoken with the manager and they had somehow found more filet mignons. While we appreciated the update, it was strange that something previously unavailable had suddenly become available. We chose this restaurant to celebrate our anniversary and were looking forward to a special evening. Unfortunately, between the underwhelming atmosphere, inconsistent information about menu availability, and overall experience, it fell well short of our expectations. When dining at a restaurant of this caliber, especially for a special occasion, we expect a much higher level of consistency, communication, and attention to detail.
