The Tambourine Room by Tristan Brandt, nestled within Carillon Miami Wellness Resort, offers an intimate 12-seat fine dining journey that reimagines modern classic French cuisine with refined Asian influences.

The restaurant marks Chef Brandt’s debut in the U.S. after years of honing his culinary point of view and receiving numerous awards and accolades, including leading multiple Michelin-starred restaurants. In 2013 when he was the head chef at OPUS V the restaurant was awarded two Michelin stars and at the time he was the youngest chef in Germany to lead a two-star kitchen. More recently, in 2022 Epoca by Tristan Brandt in Switzerland was awarded one Michelin star.

Chef Tristan Brandt and Chef de Cuisine Timo Steubing showcase an exquisite balance of French tradition and contemporary innovation. Thoughtfully crafted using only the finest ingredients, ensuring every bite is an experience and each course reflects the chefs’ mastery of flavor and technique.

MILA OMAKASE IS A 10-SEAT ENCLOSED ROOM OFFERING THE MOST EXCLUSIVE AND AUTHENTIC JOURNEY IN THE FAR EAST, MAGNIFIED BY THE MEDITERRANEAN INFLUENCES OF 26 TIME MICHELIN AWARDED CHEF MICHAËL MICHAELIDIS.

The intimate, ultra luxurious and transporting space features a massive overhanging cherry blossom tree, a Japanese craftsmanship-inspired wallpaper screen, a dramatic marble countertop, a 500-years old hinoki wood cutting board, and wall-mounted niches serving as members’ chopstick display.

The ever-changing dishes evolve according to the 72 Japanese micro-seasons, involving the most refined ingredients such as line-caught fish flown in daily, innovative vegetables and condiments, sea urchin from Hokkaido, bluefin tuna from Ehime prefecture, and Sanuki Olive Wagyu from Kagawa prefecture in Japan.

Desserts are homemade & the ricotta cheesecake is the best you will ever have. Parking is easy and meters are turned off at 6pm. We stayed at W Miami Beach and decided to try to available options at the hotel. The restaurant was empty when we entered. It felt like I bought the place out for the night. Our server was awesome. I looked at the menu on Open Table and decided I'd get the charcuterie board for starts. When I looked over the menu at the restaurant, it wasn't there. Our server asked the chef and they provided a very nice board. I also hoped for a beer I saw on the Open Table menu, La Fin Du Monde, that also was not available. Ok, I guess I'll have a Lagunita. On to the food, I ordered the slow-cooked short ribs. Slow-cooked short ribs have to be juicy and tender. Well, it was tender but tasted like chalk. They provided what I expected was a sauce for the short ribs. It seemed like straight soy sauce. I thought I needed a high blood pressure pill! Needless to say, I didn't eat the plate. The staff did notice my displeasure and took my plate off the bill. So, that was very nice of them. I'd go back ), but try something different. Thanks to our server again. I forget her name but she helped to salvage the night.

My wife and I have enjoyed dining here for years. The expanded dining room is lovely, and the food is consistently excellent. The grilled squid appetizer here is one of the best I have tried. The fish is always fresh and delicious. I highly recommend this restaurant.
