Research and respect for the traditions of Turkish cuisine have always been essential parts of my kitchen and the dishes we create at Tulum.I respect these traditions, but for us to grow, they should always be open for discussion. You listen to the views of older generations but you should not be crushed by them.Sometimes, some of our customers will say “Oh my mother didn’t make this dish like that”, and they are right. We realise that for some, there is almost an emotional barrier to change, but we believe that the traditional regional dishes of Turkey should be open to re-interpretation and be able to evolve.So at Tulum, we are not afraid to turn old ideas upside down. Within this framework, our first step was to research the classic Ottoman recipes and try them with Melbourne based products.It’s time to rethink the Anatolian kitchen.In Turkey we have a big, rich food culture, but now is the time to develop a New Anatolian Kitchen.
