This is our 4th trip to this great venue. Service was fantastic ambiance is exactly what we were expecting. This is always a must stop for us when we are in Vegas.

Excellent meal and experience. Our server Santiago was great. We were trying to eat dinner before the hockey game and he did everything he could to ensure we were in out quickly while at the same time having a wonderful experience. The space is very well done and has a very authentic feel. Highly recommend!
Food was very good. But menu lacked variety of gluten free items for celiac in party. While numerous pre calls seemed to convey gluten free options, generally limited with wait staff struggling to support table in desired gluten fee approach.
That said, for those without dietary restrictions, food top notch.

Beautiful restaurant. Best Caesar salad I’ve had. Prepared table side. Veal parmigiana was delicious but expensive. Pasta dish delicious but small.
I have been to Carbones every time we have come to Vegas for quite a while now. I tell everyone they should check it out, great food and impeccable service. However, last night our service was subpar at very best. It took over 35 minutes for our drinks to come to our table, our food came before our drinks. Our waiter/assistant came to us minimally and by minimally I’d say other than get our orders and bring a check he came one other time. When you go to carbones you of course paying for food but also for the experience which includes attentive servers. We would have definitely added to our bill of the time was spent with our table.
We’d been here 4 times previously and all were outstanding. This time was a disaster mainly led by an inattentive waiter and a smug manager. All around an awful experience. Too bad. We really used to like Carbone.
Wow just wow! Classy place with probably the best truffle pasta dish I’ve ever had! Service was outstanding! Worth the price!
The food was good but a little overpriced even for Las Vegas. Waiter pushed certain more expensive items heavily to us and surrounding patrons and the service was slow.
The place is a bit spendy, but overall well worth it. I've been to the Carbone in NY where it's difficult to get reservations, and the food at the Las Vegas location is just as good. Add to that, outstanding service and ambiance. I highly recommend this restaurant to others.
Food was just okay. Frankly nothing amazing. You can get better pasta and overall meal in NYC.
We had carpaccio, Ribeye, scallops, mushroom pasta and a couple of desserts.
The carpaccio was good. That being said we would only consider going back for the carpaccio and dessert; everything else was truly disappointing.
Celebrated mine and my sisters birthday with the family. The staff and service is amazing, they made us feel really special. They’re very attentive, they always checked on us(not in an annoying way). We first tried Carbone in NY and the food is consistent; from the cocktails, delicious breads, pastas and mains. Every dish was a hit. My brother has nuts and seafood allergies and they made sure none of those came close to him.
Great service really sticks out; one of my best dining experiences ever. I love the table-side service. I wish more restaurants still did that. ASK FOR BONNIE. She’s so warm and quirky. She gives off a really good vibe. I love her personality.

We had a wonderful dinner, great location fantastic food and very kind service. Caesars was prepared by the table! Excellent! Lobster with Pasta was soooo good!
This is our go to restaurant for special occasions in Las Vegas! We love the food and ambiance. Th ceasar salad is the best Ive ever had. Highly recommend the prosciutto and mozarella (cheese made in house) and the veal parmesan. The service is impeccable and you always leave wanting to come back. Wont ever stop going here my only hope is that thay would make a Carbone in Los Angeles!!

We booked our reservation for a beautiful Christmas Eve Dinner over one month in advance. We had the anticipation that this was the Italian place for us away from home which is New York. Unfortunately, we were wrong. The staff was very friendly, they tried to make up for their lack of service and time in between a mediocre meal....not worth the price or the time with all the other options. If you are not a celebrity, don’t waste your time, so many other restaurants that will appreciate your patronage. Sorry to write this as our wedding/honeymoon week vacay; this review was the only negative thus far.
And we have eaten at Carbone many times. This is the first time that my husband and I walked out and we’re very disappointed. Normally the food is excellent and we’ve recommended it to many of our friends. On our most recent visit we ordered eggplant Parmesan. Per the menu it said to inquire which we did. We were given a description of the dish but not given its price. The egg plant was only so-so, not up to the usual standards that we expect from Carbone. OK so maybe we ordered badly. However when the bill came we then founding that the dish was priced at $85! This was, in our opinion, completely out of line with what the dish should have cost and was significantly more money than some of the veal or chicken or fish dishes. I’m not saying I won’t go back but I will be much more careful about inquiring what things might cost when talking to the waiter
After Ride sharing there & being highly recommended arrived with a 645 pm reservation & did not get seated until after 715 pm. Finally got seated & heard the menu options. Ordered beet salad & outstanding btw. Asked for wine with my meal which was served beforehand and then waited, was told meal would be out shortly, waited some more. Was told sorry but meal would be right out & continued to wait. Tired of waiting & simply left. Ride shared back to the MGM & on to their Italian restaurant. What a disappointment. Out short of a hundy for no meal, a beet salad & a cocktail & underwhelming customer service.
Awesome as usual! My wife’s most favorite restaurant!! Had Octopus as an appetizer. Veal Marsala and Spicy Rigatoni Vodka plus all the usual additions. Also had Cabernet Sauvignon to compliment the meal. Awesome service all the way around, great atmosphere, great food - Highly recommend the Experience!
Food was pretty good.
Place was jumping! Very busy. We made reservations in advance. Waiter was a bit pushy at first but then saw that we weren’t interested in any specials that they were offering.
Party room looked pretty nice.
Would definitely go back again.

We were there for my wife's birthday, and very excited as we'd tried to go to the NYC location again after many unsuccessful reservation attempts (I had been before, but I wanted her to experience THE Carbone). To cut to the chase in Las Vegas, ambiance and music were great. However, we struggled with the menu. We alerted the waiter to pick foods without onions, and were suggested the lobster ravioli (which had onions). My wife was also concerned that the chipped plateware (which is intentional) creates health risks as there could have been lead or other heavy metals in the pottery. Then, our waiter ran into a bus boy just in front of our table and almost got into a big fight with him just there. Super awkward. And then one our entrees, the pork, came out undercooked to the point of making my pregnant wife queasy. I get it that she's hyper sensitive, but after politely re-cooking the pork, she lost her appetite.
So, after much excitement, we both left deflated.
The Captain (Maître d' ) was not that friendly. He asked you to ask questions about the meal, but when you did he was irritated. Rest of the staff was excellent.

We had a great experience at Carbone. The food was phenomenal and the service was top notch. Loved the Cesar salad, meatballs and the spicy rigatoni.

We love Carbone! We love the food! We love the service! Our only complaint is the new credit card system. MGM establishments know hand you the paper check and a credit card machine to do yourself, taking the server out of the process. Please know when you enter your tip % on the credit card machine it does not match the recommended tip amount on the paper check they provide proper to utilizing the credit card machine and charges you more. When we communicated this to the server and the manager everyone acted like they were not the one to blame versus just listening and offering to take the comment to management. It's the "I'm not going to be accountable mentality"...
