The primary business of Yojié is the Japanese fondue entrees, which consists of shabu-shabu and sukiyaki dishes. Yojié has popularized the term Japanese Fondue as part of the intensive efforts to make the concept readily acceptable to the mainstream market while giving it a new identity. The Japanese word shabu-shabu roughly translates to “swish-swish” in English. The dish is prepared by submerging a very thin slice of meat or a piece of vegetable in a pot of boiling water or dashi (broth) and swishing it back and forth to cook in seconds. The familiar swishing sound is where the dish gets its name. The FRESHLY cooked meat and vegetables are usually dipped in a variety of Japanese sauces before being eaten with a bowl of rice. Sukiyaki, known in Japan as the “Friendship dish” because it appeals to foreigners, consists of thinly sliced meat, vegetables, noodles and other ingredients that are cooked or simmered in a shallow pot in a special broth of soy sauce, sugar, and mirin.More
